high rev gear change the water jet spraying water out?

That really is bizarre! I'd probably disconnect the plug to the washer bottle motor to start with just to check that a signal isn't going electronically to the motor as you change (can't see how it can) .

If it still does the same thing it's probably the way the pipes are routed and they are collecting a bit of water somewhere which gets forced out during higher g force or perhaps the pipes are fouling the gear box ancillaries in some way? Just ideas sorry! At least if you isolate the pump first you can tell between an electrical issue or not. :)

Where are your washer hoses sat when you close the bonnet? Maybe with the higher revs, the engine moving as you change gear squashes the supply hose and squirts some juice!!

Yeah as above, or maybe the rubber hose is sitting around the gear selector and gets crushed a bit. Try moving the rubber hose and see if it still happens
